overnight oats

 

I’ll be honest.

Sometimes I just don’t have the appetite to get off my butt and make myself breakfast in the morning. Making these overnight oats made it easy to eat and is still delicious. Ashton and I had this for breakfast for a couple of days and we liked having a simple option in the morning.

I’m not sure how healthy this is, but it felt nice and refreshing to eat since it wasn’t too sweet or heavy in flavor. It was super filling, and gave me enough energy to blaze through lunch. I’d put it into the rotation.

Here’s what I used:

Bob Mill’s Red Mill Steel Cut Oats – 2 cups
Milk (Whatever Milk floats your boat, I used whole milk since I was making bread that week) – 3 cups
Crunchy almond butter (New Seasons Market) – 3 heaping tablespoons
Pinch of kosher salt
Blueberries
Goji berries
4 Tsp of Superseed Blend by Nutiva (ground flax, chia, & hemp seed)

The instructions are simple. Just mix your oats and milk together along with the almond butter, super seed blend, and kosher salt. Store in the fridge overnight. When ready to eat, scoop however much you’d like into a bowl and enjoy with toppings. I used berries and gojiberries.

Other toppings I’d like to try:

Granola – maybe something with the rice krispies ๐Ÿ˜‰
Strawberries
Maple Syrup
Dang coconut chips
